Smoked Turkey with Honey Baste

Ingredients
- 1 each turkey
- 8-10 lbs.
- 1/2 cup salt
- 1/2 cup sugar
- 1 quart apple juice
- 1 tablespoon rosemary
- 1 tablespoon basil
- 1 each honey
- for basting
Directions
- Step 1 Place turkey in brine for 8-12 hours.
- Step 2 Remove from brine. Rinse well and air dry.
- Step 3 Place turkey in the smoker with both upper and lower cavities open to expose the insides to smoke.
- Step 4 Smoke 3-3 1/2 hours or longer being careful not to dry bird out.
- Step 5 You can finish cooking in oven or on the smoker depending on need for gravy or smoke intensity desired.
- Step 6 Baste the turkey with honey during the last hour
