Smoked Salmon - Cold water with brown sugar

Ingredients
- 1 cup sugar
- 1 cup brown sugar
- 1/4 cup salt
- 1 teaspoon garlic powder
- 1 quart hot water
- 1 quart cold water
- 3 pounds fresh salmon
Directions
- Step 1 Mix the first five ingredients and then add cold water.
- Step 2 Put salmon in brine mixture and leave for 8 hours in refrigerator.
- Step 3 Remove salmon, run water over to rinse off then towel dry.
- Step 4 Put the salmon on a cooking rack at room temperature and allow a glaze to form on the outside of the fish–about 1hr.
- Step 5 Put in smoker, cooking time may very due to the outside temperature.
- Step 6 The hotter the weather the less cooking time needed. Use 3 to 4 loads of wood chips (apple, alder, cherry) or (1 to 2 if hickory.)
