Paul Kirk's Basic Kansas City Rub

Ingredients
- ****Master Barbecue Spice
- 2 tablespoons paprika
- 1 tablespoon brown sugar
- (dried)
- 2 teaspoons dry mustard powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground celery seed
- 1/2 teaspoon ground thyme
- 1/2 teaspoon sea salt
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground marjoram
- 1/4 teaspoon cayenne
- ***Basic Kansas City Barbecue Seasoning
- 1 cup cane sugar
- 1/2 cup garlic salt
- 1/3 cup paprika
- 1/4 cup seasoned salt
- 3/4 cup Master Barbecue spice
- 2 tablespoons onion salt
- 2 tablespoons celery salt
- 2 tablespoons chili seasoning
- 2 tablespoons black pepper
- 1 tablespoon ground ginger
- 1 tablespoon lemon pepper
- 2 tablespoons dry mustard
- 1/2 teaspoon thyme
- 1/2 teaspoon cayenne pepper
Directions
- Step 1 Mix all ingredients for the Spice first
- Step 2 Sift remaining ingredients and Spice together. Store in an airtight container away from sunlight.
- Step 3 To use, sprinkle ribs, brisket, or chicken as if you were putting on heavy salt and pepper. Yields 3 cups.
