Island Chicken Salad with Citrus Rum Dressing

Ingredients
  • ***CHICKEN***
  • 1 tablespoon Soy sauce
  • 1 tablespoon Cider vinegar
  • 1 tablespoon Olive oil
  • 1 tablespoon Water
  • 1 tablespoon Onion
  • minced
  • 1 1/2 teaspoons Sugar
  • 1 1/2 teaspoons Dried thyme
  • 1 teaspoon Ground allspice
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Pepper
  • 1/8 teaspoon Cayenne
  • 1 pound chicken breasts
  • 1 head lettuce
  • ***DRESSING***
  • 2 tablespoons orange juice
  • 2 tablespoons Vegetable oil
  • 1 tablespoon Lime juice
  • 1 tablespoon Water
  • 1 tablespoon Honey
  • 1/4 teaspoon Rum extract
  • 1/4 teaspoon Ground ginger
  • 1/4 teaspoon Ground nutmeg
  • 1/4 teaspoon Garlic powder
Directions
  • Step 1 Chicken: Combine all, except last 3 ingredients, in a plastic bag and squish to blend. Add chicken toss to coat. chill 2-3 hours. Remove and grill until done. Cut into strips and serve on a bed of lettuce and assorted veggies. Top with dressing.
  • Step 2 Dressing: Combine, chill and pour over salad.
