Island Chicken Salad with Citrus Rum Dressing

Ingredients
- ***CHICKEN***
- 1 tablespoon Soy sauce
- 1 tablespoon Cider vinegar
- 1 tablespoon Olive oil
- 1 tablespoon Water
- 1 tablespoon Onion
- minced
- 1 1/2 teaspoons Sugar
- 1 1/2 teaspoons Dried thyme
- 1 teaspoon Ground allspice
- 1/2 teaspoon Cinnamon
- 1/2 teaspoon Pepper
- 1/8 teaspoon Cayenne
- 1 pound chicken breasts
- 1 head lettuce
- ***DRESSING***
- 2 tablespoons orange juice
- 2 tablespoons Vegetable oil
- 1 tablespoon Lime juice
- 1 tablespoon Water
- 1 tablespoon Honey
- 1/4 teaspoon Rum extract
- 1/4 teaspoon Ground ginger
- 1/4 teaspoon Ground nutmeg
- 1/4 teaspoon Garlic powder
Directions
- Step 1 Chicken: Combine all, except last 3 ingredients, in a plastic bag and squish to blend. Add chicken toss to coat. chill 2-3 hours. Remove and grill until done. Cut into strips and serve on a bed of lettuce and assorted veggies. Top with dressing.
- Step 2 Dressing: Combine, chill and pour over salad.
