Filet Mignon with Pasilla Chile Sauce

Ingredients
  • 4 filet mignon steaks
  • (8 ounces each)
  • Salt and freshly ground black pepper
  • to taste
  • ***PASILLA CHILE BBQ SAUCE***
  • 1 1/2 cups New Mexico-style BBQ Sauce
  • 2 tablespoons maple syrup
  • 2 tablespoons pasilla chili powder
  • 1/4 cup chopped cilantro
Directions
  • Step 1 Mix all ingredients well and marinate filets for 1 hour
  • Step 2 Prepare a wood or charcoal grill and let burn down to embers
  • Step 3 Remove filets from BBQ sauce and cook on grill for 4 minutes on each side for medium rare.
