Doctor Dolan's Rub for Brisket - modified from Paul Kirk

Ingredients
- 1/2 cup dark brown sugar
- 1/2 cup brown sugar
- 1 cup garlic salt
- 1/2 cup onion salt
- 6 tablespoons salt
- 2 tablespoons celery salt
- 1/3 cup chili powder
- 1/2 cup paprika
- 3 tablespoons course ground pepper
- 3 tablespoons fine ground pepper
- 2 tablespoons cayenne pepper
- 1 tablespoon cumin powder
- 1 teaspoon coriander
- 1 tablespoon dried parsley
- 1 teaspoon dried oregano
- 1 teaspoon ground allspice
Directions
- Step 1 Combine all ingredients using a shifter. Makes enough to cover two briskets. Freeze rub not being used in a couple of weeks, will last several months in the freezer
