Cinnamon Spice Poultry Brine

Ingredients
- 1 tablespoon allspice
- 1 tablespoon mustard seed
- 1 tablespoon coriander seed
- 3 bay leaves or 4
- 1 tablespoon cayenne
- 1 tablespoon cloves
- 1 tablespoon black pepper
- 1 tablespoon mace
- 1 tablespoon cardamom
- 5 cinnamon sticks
- 1 cup brown sugar
- (packed)
- 1/2 cup kosher salt
- 3 cups cider vinegar
- 3 cups water
Directions
- Step 1 Bring the whole mixture to a boil on the stovetop, then let cool to room tempter
- Step 2 Put your poultry in, and marinate in the fridge for at least 24 hours, but a few days is even better. remove the bird and smoke it.
