Brisket Finishing Mop with Mushrooms

Includes making homemade ketchup
Ingredients
- ****Homemade Ketchup
- 1 6 oz can tomato paste
- 1/4 cup brown sugar
- 3 tablespoons cide vinegar
- 1 tablespoons chicken stock
- 1/2 teaspoon dry mustard powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground allspice
- ****Actual Mop
- ¼ cup butter (1/2 stick)
- 5 garlic cloves - pressed
- ½ pound white button mushrooms, sliced
- 1 cup Homemade ketchup
- 2 cups rich beef stock (start with 2 14 ½ ounce cans of beef broth, cook until down to 2 cups)
- ½ cup Worchestershire sauce
- 1 tsp black pepper
- 1 tsp sea salt
Directions
- Step 1 Ketchup – combine all ingredients in saucepan and simmer for 30 minutes. Apply warm to meats.
- Step 2 NOTE: This works well on chicken – apply 30 minutes before taking off the smoker/grill
- Step 3 Brisket Finishing MOP – Melt butter, then sauté garlic (1 minute), then add mushrooms, stirring constantly for 3+ minutes.
- Step 4 Blend in homemade ketchup, stock and Worchestershire sauce, other ingredients, bring to boil, reduce heat cook for 30 to 45 minutes
- Step 5 Use mop warm, do not store in refrigerator
