Brisket Finishing Mop with Mushrooms

Ingredients
  • ****Homemade Ketchup
  • 1 6 oz can tomato paste
  • 1/4 cup brown sugar
  • 3 tablespoons cide vinegar
  • 1 tablespoons chicken stock
  • 1/2 teaspoon dry mustard powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground allspice
  • ****Actual Mop
  • ¼ cup butter (1/2 stick)
  • 5 garlic cloves - pressed
  • ½ pound white button mushrooms, sliced
  • 1 cup Homemade ketchup
  • 2 cups rich beef stock (start with 2 14 ½ ounce cans of beef broth, cook until down to 2 cups)
  • ½ cup Worchestershire sauce
  • 1 tsp black pepper
  • 1 tsp sea salt
Directions
  • Step 1 Ketchup – combine all ingredients in saucepan and simmer for 30 minutes. Apply warm to meats.
  • Step 2 NOTE: This works well on chicken – apply 30 minutes before taking off the smoker/grill
  • Step 3 Brisket Finishing MOP – Melt butter, then sauté garlic (1 minute), then add mushrooms, stirring constantly for 3+ minutes.
  • Step 4 Blend in homemade ketchup, stock and Worchestershire sauce, other ingredients, bring to boil, reduce heat cook for 30 to 45 minutes
  • Step 5 Use mop warm, do not store in refrigerator
