Tuna Burgers

Ingredients
- 2 pounds minced fresh tuna
- 2 tablespoons whole grain mustard
- 2 tablespoons capers
- minced
- 1/4 cup cilantro
- minced
- 1/4 cup scallions
- minced
- 1 tablespoon chipotle puree
Directions
- Step 1 Prepare a wood or charcoal fire and let it burn down to embers.
- Step 2 In a large mixing bowl, combine all ingredients and season to taste with salt and pepper. Refrigerate until ready to use.
- Step 3 When ready to use, form into 1 inch thick patties. Brush tuna burgers with olive oil and season with salt and pepper.
- Step 4 Grill for 1 minute on each side for rare.
